INGREDIENTS
CRUST
2 cups graham cracker crumbs (9 to 10 whole graham crackers, crushed)
1/4 cup powdered sugar
6 tablespoons butter, melted
1/8 teaspoon salt
FILLING
Three 8-ounce packages cream cheese, at room temp
3 large eggs, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
INSTRUCTIONS
Make the crust by stirring together all of the crust ingredients and mixing until thoroughly combined.
Press the crumbs into the bottom and up the sides of a springform pan, making a thicker layer on the bottom than on the sides.
Make the filling by mixing together the room-temperature cream cheese and sugar until smooth. Mix in the eggs and vanilla, again mixing until smooth. To avoid beating too much air into the batter, use a mixer set at low-medium speed. To avoid lumps, make sure the cream cheese is softened, or at room temperature.
Set the pan inside a baking sheet and bake at 350 for 30 minutes, then rotate. Bake another 30-40 minutes until center is cooked through. Edges are likely to have turned a golden brown and the center should spring back to the touch but will still be Jello-jiggly.
Remove and chill thoroughly before serving.
