HIXON’S FIXIN’S SLOW COOKER POT ROAST RECIPE
This slow cooker pot roast is a comforting one pot dinner that's easy to prepare and wonderful to serve to a group. The roast cooks with potatoes, carrots, and celery, resulting in incredibly tender meat and veggies that are perfect for dinner any day of the week.

INGREDIENTS
2 tbsp olive oil, divided
1 (3 lb) chuck roast
1 medium yellow onion cut into thick slices
5 garlic cloves, minced (1.5 Tbsp)
2 cups cup beef broth
2 tbsp Worcestershire sauce
4 tbsp Hixon’s Fixin’s original
2 lbs potatoes cut into 1-2 inch pieces
2 cups carrots cut into 1 inch pieces
2 cups chopped celery
3 tbsp cornstarch (optional)
2 tbsp chopped fresh parsley (optional)

INSTRUCTIONS
Heat 1 tbsp olive oil in a large pot over medium-high heat. Dab roast dry with paper towels, season all over with grill seasoning.
Sear roast in pot until browned on all sides, about 2 minutes per side. Transfer roast to slow cooker.
Add remaining 1 tbsp olive oil to pot. Add onion and sauté 3 minutes, add garlic and sauté 30 seconds longer. Pour onion mixture over roast in slow cooker.
Return pot to heat, pour in beef broth, Worcestershire, and 2 tbsp grill seasoning, then cook about 1 minute, just long enough to free browned bits from the bottom of the pot. Remove from heat.
Layer potatoes, celery, and carrots over onion layer in slow cooker, pour broth mixture evenly over top.
Cover slow cooker and cook on low heat until roast and vegetables are tender, about 8-9 hours. Shred roast with a fork prior to serving.
Pro Tip: If you'd like to thicken the broth and make a gravy, remove the veggies from slow cooker and pour broth into a small saucepan. Heat over medium-high heat. Whisk cornstarch with an equal part of cold water then pour into saucepan. Bring to a simmer, stirring constantly, let simmer 30-60 seconds. Plate roast and vegetables, pour gravy over the top, and sprinkle with parsley.
